Looking to cut down on cooking time for fried wings. I am using a fresh 7-9 disjointed and it is taking about 9 minutes @ 350 degree oil. People are raving about them, but I need them to be in the 5-6 minute range. I want to par cook without losing the quality. I think steaming should keep integrity of the chicken. Any ideas??

You could also try gently par boiling (poaching) them in well seasoned water. You'd end up with moist wings and chicken broth.

Depending on what else you use the frier for you also might conider pumping up the heat. A hot frier is good crisping wings quickly and for shoestrings but not regular or steak fries of calamari etc.
