New England Boiled dinner for one 1 Year ago  
Since I live alone my biggest challenge is adapting my favorite recipes to suit one person. I love New England boiled dinner (corned beef, cabbage, carrots, potatoes and onion). I'm NOT looking for a recipe that uses deli sliced corned beef.

I bought a 5 pound corned beef, and cut it into one pound sections. I've tried boiling it alone and with the vegetables. I've been using the classic spices in the water. My corned beef comes out tough and the vegetables are tasteless. Nothing like the New England boiled dinner I remember from my childhood, or even from a restaurant.

Can anyone help me figure out a way to make New England boiled dinner (the classic version) for one?

My guess is you scaled back the cooking liquid spices. I dont think you should.

For the tough part remember simmer, dont boil and dont pull the CB until fork tender.
