What do the different colors of wax rind on cheese mean? Red, black, brown.....????

Black has been traditionally used for aged cheeses and red is commonly used on Dutch cheeses. The 'yellow' wax has no color added to it. Most home cheese makers simply use the color they prefer.

Normally you can find the cheese with white or yellow colour. Goat cheese is always white while sheep and cows cheese is yellowish in color.
Nowadays colorants are also added to cheese. Often a natural coloring annatto will be added to cow and sheep’s milk cheeses to create a more uniform and deeper colored cheese, most noticeable in bright orange or red colours. This is just a marketing tool as most people think that brighter colored cheese is better as it tastes sharper
