Dicing cuban oregano? 1 Year, 4 Months ago
|
|
|
Hi,
I am on my towns Prostart Competition team and my recipe (Evaristo Crab Salad) calls for 2 sprigs of cuban oregano. Being such a small size, it is hard to dice them without crushing them and losing a lot of the flavour on the board. What techniques are best for a successful cuban oregano dice?
What I have tried:
-Rough dice (worst idea)
-Leaving sprigs intact and individually dicing each sprig (second best)
-Leaving sprigs intact and grouping them and dicing them (best technique I have tried)
If there are any techniques I have failed to try, please let me know; any other advice is greatly appreciated.
Kind regards,
Travis.

Hey Travis,
I’m not familiar with Cuban Oregano in particular but with any fresh leafy herb, that will be consumed in a dish, you pick out the tough stems and dice to the appropriate size with a sharp knife.
The only issue is to sure not to include any pieces of stem that are not as tender as the leafy part. (Unless that will be used in a sachet)
Good luck with the competition!
Cheers,
G
