aroma paste 1 Year, 7 Months ago  
I am looking for a link or name of company that supplies aroma pastes of different kinds for baking and chocolate truffle making. I am especially interested in Lavender paste. I was given some at Knipschlit Chocoatier and cafe. I would love to have their or any other source.

I'm not sure about aroma pastes to be honest. The easiest way would be just to get the essential oils you're after and add them in. Any place that sells essential oils (Some Drug stores, aroma therapists, new-age stores) will often have things like Lavender.

The paste was probably just a colouring paste mixed with a few drops of the essential oil. The FDA has a database of all kinds of oils and substances that can be used as flavourings and weather or not they're safe to use:

Meh, most of the aroma pastes are developed for the ice cream industry. Many contain oils or alcohol, and some even contain actual bits of real fruit.

Unless you're in a hotel or ailrline kitchen pumping out nameless "mousse cakes of the day" stay away from the stuff.

Currently, I produce 28 varities of ganache filled bon-bons, and I'm proud to say, I don't use any "manufactured" products. I do use Eaux de vies (fruit brandies) and fresh fruit purees though. I make my own jams and marmalades use fresh brewed coffees and teas, make my own dried fruit, crystalized ginger, candied citrus peel, grow and use my own herbs and flowers, make my own caramels, nougats and roast whole nuts.

You don't need that aroma paste stuff unless you doing heavy production, O.K.?
