It could be good talk about the history of the crepes and also some names for a place to sell crepes.

Hi Ili ,

It really a coincidence you should ask about crepes.

Last week my wife daughter and I were out and didn’t feel like cooking and decided to stop at a local Crepe place for dinner. The place has been there for years and has gotten great reviews but being a steak and potatoes guy I always chose a different style place.

I was very pleasantly surprised. The food was good; I had a chicken blue cheese and walnut crepe as an entrée and a chocolate/hazelnut banana one with ice cream for desert. I’m a big guy but was totally satisfied with the portions.

The menu was tiny, a total of 9 entrées and 8 desserts and a soup that isn’t even mentioned on the menu. Prices were great, from $5.95 to $9.95 for entrees and $5.95 for desserts. (Same meny lunch and dinner) Beverages were reasonable priced and they offered beer and wine by the glass. The plate was simple, the crepe with a micro green salad in a tasty house vinaigrette and a half slice of tomato, period.

The place was tastefully but sparsely furnished in Ikea modern with seating for about 50, all in deuces. The kitchen was open and tiny, about 90 sq ft. Just a griddle for the crepes, a hot table for the fillings and a small cold station for the salads and cold crepes. The skill level of the kitchen crew was well suited to the task at hand but minimal for a normal à la carte environment.

Even though we were in the middle of the worst snow storm of the winter the place was 2/3 full when we arrived at 6 (every other place we drove by was empty) and full when we left at 7:30. While we were there they did about half a turn.

What really appealed to me about the concept was that their food cost had to be less that 15% and they ONLY TOOK CASH, just about unheard of here on Long Island NY.

How do you spell money making concept- CREPES! I realize that this is a very old concept ie- Le Crepe or Magic Pan, but all things old can be new again and in this economy this price point and product mix definitely works, in the right neighborhood.

Now to your questions- History- not sure but I’ll bet just about every culture has had a flour or cornmeal type wrap for a wide variety of ingredients.

The name of this creperie is Fresco.

Thanks a lot for answer me!

Here in Mexico the crepes are kind of expensive it depends of the place, and where I'm going to sell it's gonna be in my house so the prices can't be high.

I found some history about the crepes there're 3 people that could be the creator of that magic pan, I'll write you soon ok?!
