Norwegian Cruise Line America is currenlty seeking for an experienced Chief Pastry (Executive Pastry Chef)
General Requirements:
Education: 2-3 year Pastry Certification or foreign equivalency
Experience: Minimum 3 years experience as a Pastry Chef in a large size cruise ship or multi-venue, high volume, luxury hotel/resort/casino
Basic Purpose:
The Chief Pastry's primary responsibility is to manage the operations of the pastry production galley, and to ensure that the line's high standards are achieved and maintained within budgetary limitations.
Functional Expertise:
- Excellent pastry, baking and demonstration skills
- Solid progression through the Pastry ranks
- Must have a strong knowledge of: Modern contemporary plated desserts, Classic European desserts, Classic American desserts, Asian desserts
- Artistic knowledge of work with chocolate, sugar, pastillage and marzipan, Petit four and mignardise, Tea, coffee, cakes, wedding cakes and pastries
- Successful track record of managing food cost and inventory control
